Cauliflower

Cauliflower is a cultivated brassica where the immature flowers rather than the leaves are developed. The florets, which make up the head, are known as the curd. The curd is white in colour but over-exposure to sunlight will result in a creamy or yellowish appearance.

Preparation and Use

Cauliflowers like to be kept at a temperature of about 2 C, so refrigeration is a must.

To prepare a cauliflower for cooking, first remove any outer leaves.  Then chop off any tough stalk at the base of the cauliflower as this doesn't taste good.  Then cut off individual florets or larger section depending on your recipe.

Health and Nutrition

5 a Day - 8 florets of cauliflower count as 1 portion towards 5 a day.

Cauliflower is a good source of vitamin C which boosts the body's immune system, helping you to fight disease.
